Pulled Pork or Beef

Cook roast until tender. If done in crock pot, cook all night or 8-10 hours on low.
Pull meat apart once cooled enough to touch. Add to BBQ sauce and serve.

Tammy Higley's BBQ Sauce

1 c ketchup 1/4 c vinegar
dash pepper 1/2 c water
1/4 c molasses 3T Worchestershire Sauce
2 t salt 1/2 t dry mustard (or wet in case of emergency)

Mix, heat, let stand and pour over meat.
It tastes best if it's left overnight to cure a bit.

Mountain Man Breakfast

2 lbs country sausage
1 pkg cubed hash browns
8 eggs, beaten

Crumble and brown sausage in Dutch oven (or fry pan). Remove sausage and drain, set aside. Using drippings, brown hash browns (use more oil if necessary). Layer hash browns on bottom baking dish or dutch oven, then add sausage. Add 1/2 cup water to eggs, beat thoroughly and pour over hash browns. Sprinkle cheese on top.
For dutch over, put hot coals on top and bottom. Cook til eggs are firm.
For baking dish cook 20-30 mins, until eggs are firm.

Lemon Chicken and Rice Recipe

SERVINGS: 2
TIME: Prep/Total Time: 25 min.
Ingredients:
1/2 pound boneless skinless chicken breasts, cut into strips
1/4 cup chopped onion
1 medium carrot, thinly sliced
1 garlic clove, minced
1 tablespoon butter
1 teaspoon cornstarch
3/4 cup chicken broth
1 tablespoon lemon juice
1/4 teaspoon salt, optional
3/4 cup uncooked instant rice
1/3 cup frozen peas
Directions: In a skillet, cook the first four ingredients in butter. Combine cornstarch, broth, lemon juice and salt if desired until smooth; add to skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in rice and peas. Remove from the heat; cover and let stand 5 minutes. Fluff with a fork. Yield: 2 servings.

The "P" Baby Shower








Yesterday was Amber's first baby shower, given by her friend Laci. It had a "P" theme, polka dots, pink, purple. She got so many fun things, her friends at Hazen Photography, where she works, were very generous.
We played guess the candy bar - melted, smushed up candybars placed in baby diapers - oh the memories that brought back. You had to look and smell the candy bar and try to decide what it is.

Moving Out and On

Today Brynn was able to find a place to live in Hyrum for the summer and Brooke and Justin signed on their apartment too. Brynn's glad to be going back to Cache Valley and Brooke is pretty darn nervous about moving out. Can't wait to see the sticker shock after they go to the grocery store for that very first 'stocking the kitchen' visit.

We've enjoyed having everyone home for the last 10 weeks but also look forward to watching them grow as they take their next steps in life.

FRANKENFRED



On Wednesday, Fred (aka King Tut) had 3 cysts removed from his little body. We couldn't believe it when we finally saw him - a 5-6 inch gash across the back of his head held together with staples! That didn't include the other two incisions that they made to remove two more. He was so drugged and out of it that Ken really wondered if we would find him alive the next morning due to the trama of the surgery.

On Thursday night, he was feeling good enough to go under Izzy's pen while she was eating, but was smart enough to keep quiet. He stayed outside with me for a while as Ken was cementing a fence post on the new fence line and I was clearing out the area where the barn is going to go.

Tonight was the first time I heard him bark - he visited with the horses while they were eating and then he visited with Drew for a minute when he came over. He's figuring out how to scratch the wounds now, and I'm afraid we are going to have to make him a coney.

Who would have ever thought he'd live to be this old, especially with all the medical problems he's had over the years?

Happy Easter!

Happy Easter to all our friends and family! This morning we had breakfast for the kids because they were all going to be gone in the afternoon. Thank goodness for a new 1:00 church time. We had Mountain Man breakfast, sticky buns, fresh fruit and of course - the Campbell boys' favorite, BACON! I found a great toy to add to their baskets - these bunnies that you fill up with jelly beans, wind it up and send it on its way. It walks and poops jelly beans! We are nothing, if not easily entertained. Drew got a chicken that layed bubble gum, and in a tight race against the bunny.....the chicken won!

Our ward was realigned while we were in Bear Lake and today was the first Sunday we were back in our old building and at our new time. There's something comforting about going back to a building that has lots of meaning to you. Maybe it's the pipe/pump organ that I love to play there...I never could get used to the one in the building we moved to a couple of years ago.

We will miss those families that are not in our ward anymore, and wonder what changes are next and if they will affect us.

I'm not a huge fan of 1:00 church, but today it had it's advantages. It was so cool to see a whole row of Campbell's at church today. Everyone was there but Brynn, who was out of town.

How soon can I mow?



I have been patiently waiting to mow the grass - we laid the sod right before we went to Hawaii last year, so it still hasn't ever seen a lawnmower yet. The snow is almost all gone - so out comes the fertilizer during the next rainstorm and I'll have my work cut out for me. Next we can add the fence out front so we can move Izzy and her baby out there so they can be close to us - can't wait to wake up one morning and look out the window to see them.

Red Green wannabe



We had been pretty lucky for the last couple of years, but this year we had more snow than we could handle. Ken had to dig out a pretty big hole in the back yard, build his Red Green water mover, and pray for sun! The kids had to clean up water in the basement all three nights we were in St. George, and we had even sandbagged before we left!
Drew told Ken all that was missing on the water mover was baling wire and duct tape. Oh, Grandma Campbell would have been so proud...

Bear Lake Pizza



On Saturday night we had planned to take the kids to Bear Lake Pizza. The girls had had pizza from there a few years ago during one of the Miller family Bear Lake adventures. However, the boy's hadn't - so we thought it would be fun to introduce them to it. The Big Ephraim pizza is 28" and pretty darn tasty!

The paper plate comparison really doesn't do it justice, but we thought it might show just how big the pizza really is. Probably the first and last time that we'd take home leftover pizza with all those hungry boys.

Bear Lake in the Winter







We took the kids to Bear Lake for our first, but hopefully not the last, family getaway. We had thought about it for a few years, but summer is to busy and we couldn't figure out an adventure that everyone could participate in during the winter. On Valentine's Day, I got the arrangements finalized and we gave each family member a Valentine inviting them to the getaway.


On Friday, we all headed up to the lake to check into the condo - what a great place! Indoor pool, right across from the marina - this picture was taken from the walkway to the condo, plenty of room for everyone, NCAA basketball conference tourney weekend, and sledding was about 15 minutes back up the canyon.


Carson arrived from Colorado on Friday, but met up with us at the Sinks on Saturday morning for some early morning riding. No one was up there, it was even pretty warm with a light snowfall. It was Chase's first time really riding and we wondered if he'd ever come back - he was having so much fun. I tried to give Ken and Drew heart attacks with my 'bravery' (and I got quite an earful when I was off the hill). We even managed to loose Carson a couple of times, maybe because Brynn was 'outa there' and off exploring the Sinks and he was trying to find her!


Notice in the picture that I somehow managed to get up the hill without my boots, so I had to borrow Brynn's cowboy boots - I believe that's redneck sleddin'!
