2 lbs country sausage
1 pkg cubed hash browns
8 eggs, beaten
Crumble and brown sausage in Dutch oven (or fry pan). Remove sausage and drain, set aside. Using drippings, brown hash browns (use more oil if necessary). Layer hash browns on bottom baking dish or dutch oven, then add sausage. Add 1/2 cup water to eggs, beat thoroughly and pour over hash browns. Sprinkle cheese on top.
For dutch over, put hot coals on top and bottom. Cook til eggs are firm.
For baking dish cook 20-30 mins, until eggs are firm.
